Organic Khandsari Sugar

Khandsari sugar is generally a form of simple sugar that is physically extracted from the liquid jaggery making it the healthiest alternative to refined white sugar.

At Ikkhu Ras, we prepare Khandsari through a completely natural method.  It straight away gets started with the extraction of juice from chemical-free – organically grown sugarcane. The juice then passes through a filter where a plant-based cleaning agent  ‘suglai’ is added to purify it. (‘Suglai’ is a plant that is crushed to activate its enzymes & then added to the juice) The sugarcane juice is then set to boil in large pans. The impurities appearing on the top of the juice are continuously removed. Usually, sodium hydrosulphide is used in other plants to clean it, but at Ikkhu Ras we use ‘suglai’.

The sugarcane juice is boiled until it turns into thick liquid jaggery syrup. The syrup is let to stay for a couple of days for the formation of sugar crystals in a Crystallizer. Finally ‘raab’ the main component is extracted from the process of crystallization. The ‘raab’ is now transferred to a machine / vertical spinner. Here the khandsari gets separated from the sheera / molasses. The process of separating sugar crystals is mechanical hence keeping the main product chemical-free. No bleaching or refining agents such as suphur are used anywhere in the process that is why Ikkhu Ras khandsari is slightly yellow in color.
